(Ep.5) BRIX, Genetics, & Specialty Coffee Production in Ecuador



Coffee production in biodiverse Ecuador is experiencing a renaissance. First generation producers take advantage of modern science and technology. PDG visits Finca Frajares, a high altitude coffee farm in the Noroccidente de Quito Region. Producer Francisco Restrepo describes how seedlings are chosen and the plants carefully managed. Post-harvest, coffee cherries are hand sorted and sugar levels measured via refractometer prior to fermentation and drying. Francisco can tell a lot about a coffee’s genetics by examining the beans. Ecuadorian producers are experimenting with Sidra, a local hybrid of Typica and Bourbon!
